Organic Fruity Lemon Scones

Method: 
  1. Preheat the oven to 200°C/ Gas 6. Place a baking sheet in the oven to preheat.
  2. Sift the flour into a bowl, add the butter. Chop the butter into the flour with a knife until the butter is in peanut size pieces. Then rub the butter into the flour between your finger tips until it resembles bread crumbs.
  3. Add the honey, citrus zest, raisins and yoghurt mix until the ingredients come together as a dough.
  4. Using floured hands, knead the dough lightly on a floured surface and pat out to about 2cm/¾in thick.
  5. Using a small pastry cutter, cut out 6 scone rounds.
  6. Place the scones onto the preheated baking sheet and brush with milk.
  7. Place into the oven to bake for eight minutes, or until risen and golden.


Serving suggestions: Serve with greek yoghurt mixed with a little honey then top with fresh fruit

Ingredients: 

100g Organic self-raising flour

50g Organic unsalted butter, cut into cubes

1 tbsp Organic Honey

50g Organic Greek yoghurt

1 Box of Organix Organic Raisins and apricot

½ Zest of an Organic Lemon

½ zest of an Organic Orange

Splash of Organic milk
