Organic Fruity Lemon Scones

6 Method:
- Preheat the oven to 200°C/ Gas 6. Place a baking sheet in the oven to preheat.
- Sift the flour into a bowl, add the butter. Chop the butter into the flour with a knife until the butter is in peanut size pieces. Then rub the butter into the flour between your finger tips until it resembles bread crumbs.
- Add the honey, citrus zest, raisins and yoghurt mix until the ingredients come together as a dough.
- Using floured hands, knead the dough lightly on a floured surface and pat out to about 2cm/¾in thick.
- Using a small pastry cutter, cut out 6 scone rounds.
- Place the scones onto the preheated baking sheet and brush with milk.
- Place into the oven to bake for eight minutes, or until risen and golden.
Serving suggestions: Serve with greek yoghurt mixed with a little honey then top with fresh fruit

100g Organic self-raising flour
50g Organic unsalted butter, cut into cubes
1 tbsp Organic Honey
50g Organic Greek yoghurt
1 Box of Organix Organic Raisins and apricot
½ Zest of an Organic Lemon
½ zest of an Organic Orange
Splash of Organic milk
